tri yummy

Here's the recipe for a cookie I've made a few times before, however it really hit the perfect spot of yummyness this holiday season.  I don't recall where I originally got the recipe and it doesn't say how many it makes, but thinking back I'm guessing around four dozen cookies or so.  
Neopolitan Cookies

1 cup butter
1 1/2 cups sugar
1 egg
1 teaspoon vanilla
2 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon strawberry extract
red food coloring
1/2 cup shredded coconut
1 square unsweetened baking chocolate, melted

Line a 9x5x3 inch loaf pan with waxed paper and set aside.  In a mixing bowl, cream the butter and sugar together.  Beat in the egg and vanilla.  In another bowl, combine the flour, baking powder, and salt;  gradually add to the creamed mixture.  Divide the dough into three parts.  Add the strawberry extract and 5 - 6 drops of red food coloring to one third, then spread it evenly in the prepared pan.  Add the coconut to another third, then spread it evenly over the first layer in the pan.  Add the chocolate to the last third, then spread it evenly over the second layer.  Cover the pan with waxed paper and refrigerate overnight.  Unwrap the dough and cut it in half lengthwise.  Cut into thin slices placing them on ungreased cookies sheets.  Bake at 350 degrees for 8 - 12 minutes.
